The cuisine is essentially fish, refined by the use of typical local produce such as olives and capers. The tendency of the expert local cooks is to combine the flavours of the past with a more modern way of eating. The island of Salina produces Malvasia, a D.O.C. wine known all over the world. It is a dessert wine, amber in colour and with a sweet, aromatic flavour. It can be bought in shops all over the island. Another typical product is capers, which the islanders have been cultivating and processing, from bud picking to salting, since ancient times.

"Il Delfino" in Lingua lies in one of the most beautiful corners of the island and offers a new way of tasting fine dishes from traditional Aeolian cuisine, presenting them in a novel fashion. The excellent kitchen proposes: octopus salad, “Al Delfino” pesto with pine kernels, capers, almonds and basil, swordfish rolls with breadcrumbs, cheese and a slice of swordfish. Then there's “Calamaretti alla Malvasia” (Squid in Malmsey wine) and the marvellous “Piparelli e Malvasia” (Piparelli and Malmsey wine).
